Crisp Apple Pie

Apple pie is a Christmas staple for me… I don’t think that you can ever go wrong with an apple pie; there is something about it that just always feels like home. I love it sweet and crispy, and try to make one any chance I get, but especially around Christmas. My family gets together at my grandmother’s house for the holidays, and apple pie makes me think of the warmth and the laughter that comes from her house every year.

This is my go-to recipe, the only thing that changes is how I top it each year. I used cutouts for this one, but laying a flat top, or weaving would also be great!

Ready to Bake Pie Crusts (I like the Pillsbury ones)

5 cups thinly sliced apples (about a 3lb bag)

2  1/4 tsp Lemon Juice

3 cups Water

1 cup and 2 tbsp Sugar

1/4 cup Cornstarch

1  1/2 tsp Ground Cinnamon

1/4 tsp salt

1/4 tsp Ground Nutmeg

Take out your crusts so they can come to room temperature

Preheat oven to 425°F

Cut apples thinly, toss in lemon juice and set aside

Put water on stove over medium heat

Combine sugar, cornstarch, cinnamon, salt and nutmeg

Add combination to water, stir well, bring to boil

Boil for 2 minutes, stirring constantly

Add apples and return to boil

Reduce heat, cover and simmer about 6-8 minutes

Cool for 30 minutes

While apples are cooling, prepare your crust

I did cutouts for my pie top this year, but you don’t have to

Add apples to crust and bake for 12-15 minutes
